build(compose.yaml): introduce TRUSTED_HOSTS and CADDY_MERCURE_PUBLIC_URL variables

Fix issue with invalid TRUSTED_HOSTS and MERCURE_PUBLIC_URL when using http://localhost or :80 as SERVER_NAME
